At Solis, every dish is a moment that evokes memorable travels in the Mediterranean through the senses. From sun-kissed sands to cerulean seas, volcanic slopes and everything in between, guests are left aglow in experience after their meal. An evening here doesn’t just linger on the tastebuds, it delights and transports our guests as only a Seabourn Moment can.

SOLIS will feature 143 dishes:
14 savory standard dishes, 19savory dishes on 7-day rotation (Day 13). 35 desserts on a 7-day rotation (Day 5). 3 dessert standard dishes.

Beyond the culinary, guests will be able to indulge in a truly sophisticated experience with Seabourn’s newly presented, refined vintage cocktail menu, featuring an allure of classic cocktails expertly crafted to perfection. From classics such as the Kir Royale or Negroni to the always-popular Aperol Spritz, the team of talented mixologists have meticulously curated this menu to ensure that every drink is a masterpiece of flavors and aesthetics.

Master Chef and Culinary Partner :

Chef Anton “Tony” Egger, born into a family of Austrian restaurateurs, grew up in an atmosphere imbued with a farm-to-table ethic. After graduating with a bachelor's degree in a Culinary Arts program in Salzburg, Austria, he worked with a number of prestigious establishments in Austria, Switzerland, France and Asia.

While collaborating with the cruise industry through his consulting firm CULPLUS.COM, Chef Egger opened restaurants in Singapore and Bangkok; designed concepts and culinary training programs in Asia and Europe; and appeared worldwide in culinary events with some of the most highly acclaimed Michelinstarred chefs in the world.

Chef Egger is the culinary mastermind behind two of Seabourn’s most popular dining concepts – “Earth & Ocean” and “Sushi” – and was responsible for creating new recipes, service style, choice of uniforms, china and tableware, and more.

Senior Corporate Chef :

Chef Franck Salein possesses a solid background in the culinary world, having had the privilege of collaborating with some of the globe's most renowned chefs at several 2 and 3 Michelin-star restaurants. His culinary journey has taken him to prestigious hotels, where he has been immersed in the epitome of luxury.

Chef Salein’s culinary philosophy centers on an unrelenting dedication to research, innovation, and the art of creation, all fueled by his profound passion for crafting healthy and delectable gastronomy. His resolute commitment lies in accentuating the exquisite flavors of the finest seasonal produce.

Within the industry, Chef Salein firmly upholds the belief that guests should invariably be given precedence, as they represent the foremost priority for any establishment.

Chef Salein played a major role behind two of Seabourn’s most popular dining concepts – “Earth & Ocean” and “Sushi” – working closely with Chef Egger to bring both concepts on board the ships
